If you’re looking for a quick, fun Valentine’s Day treat to bake, these strawberry cake mix cookies are perfect. When I was in college, one of my friends brought these to a get-together and I loved them so much that I asked her for the recipe. I was shocked when she said that the main ingredient was cake mix. Every time that I’ve made these they’ve turned out pretty much perfect (which is a testament to how easy the recipe is, haha). Not only are they delicious, but they also have a very bright color that would bring a lot of fun to your Valentine’s Day. So, here’s how to make them:

Ingredients:

1 package of strawberry cake mix (I use the Pillsbury brand)

2 eggs (I use Egg Beater’s 100% Egg Whites)

1/3 cup of vegetable oil

Instructions:

1. Preheat oven to 375 degrees

2. Combine the cake mix, eggs, and oil into a bowl and stir (this will become dough so it needs to be a fairly thick mixture)

3. Place tablespoon sized balls of dough on a cookie sheet

4. Bake for 6-9 minutes (but make sure to keep an eye on these while they’re baking…they don’t taste as good when they’re brown around the edges, so take them out of the oven before they reach that point)

5. Cool the cookies and then indulge! Side note: these taste great with cream cheese frosting on top. I’ve also heard that they’re good with chocolate chips. ;]

So yeah, EASIEST COOKIES EVER. I want to try this recipe with other kinds of cake mix at some point too.  That’s all for now. Thanks for reading! :]
